It’s that time of the year. Fresh apples. Good to eat straight from the tree, bake with cinnamon, brown sugar, and butter, or maybe a fresh apple cake that my aunt makes that is always so delicious. So many recipes and ideas running through my head!
Tomato gravy and made from scratch biscuits bring back so many memories of growing up in the South. Early each morning, my mom cooked a breakfast which usually consisted of homemade biscuits served with butter and homemade jam, eggs (fresh – gathered each day), bacon, sausage or ham, grits, and fresh milk. When tomatoes were in season, the delicious tomato gravy was added to the breakfast lineup. That is just the way it was back then when life was simple.
Lunch is Served! Today’s menu features Stovetop Tilapia drizzled with Lemon Butter Sauce. This is definitely a “keep it simple” meal. Here is the meal: Tilapia with Lemon Butter Sauce and Toasted Walnuts, Baked Sweet Potatoes with Brown Sugar and Cinnamon Glaze, Sauteed Fresh Zuchinni, Fresh Corn on the Cob, and a tall glass of iced sweet tea!
Lemon Garlic Salad Dressing is a wonderful combination with fresh greens and vegetables. The lightness of the dressing does not overpower the wonderful flavors of fresh greens! Combined with smoked or grilled chicken or fish, it makes a perfect and healthy meal! One of my favorite fish to serve with this is Black Drum Fish, a mild salt water fish that holds together nicely for serving.

Blackberry cobblers are hard to beat when topped with vanilla ice cream (sure do miss Blue Belle Homemade Vanilla Ice Cream!) In the last few weeks, I have been making blackberry cobblers, some for us, but most have been given away or my husband has taken them to work. I am using the berries that we put in the freezer from last season. Once thawed and baked in the cobbler, I cannot tell a difference between the frozen berries and the berries picked fresh from the bushes. I have several friends on my list that will be getting a cobbler very soon! Here is the recipe, the one that my grandmother used with a lattice top that is easy to make!
Rice Pudding. It is one of those sweet Southern classic comfort foods most of us have eaten many times if you grew up anywhere south of the Mason Dixon line or call yourself a Southerner. It was at the top of our family’s favorite dessert list along with Banana Pudding and Blackberry Cobbler! Today, when I think of the Rice Pudding baking in my grandmother’s kitchen stove, it brings back a warm and safe feeling of home and childhood days.
