Beets! Yes, I love them and picked my first fresh beet of the season from my garden yesterday. Nothing taste as good as home-grown.

The beet shown in the picture is a beet I intentionally let grow to a large size. The bigger, the sweeter.

I eat beets raw. Why? While going through chemo, a chemist taught me that if you heat beets, their powerful cancer-fighting properties are destroyed. Love my raw beets!

Without fail, someone always asks what they taste like, and I respond, “Like dirt, but it’s really good dirt!”

I am a big fan of pickled beets, but once I started eating them raw, they became a favorite afternoon snack or an addition to a garden salad with my meal. 

My favorite salad includes roughly chopped beets with broccoli, kale, cauliflower, carrots, toasted almonds, and feta or goat cheese. I serve the salad with an olive oil/vinegar dressing.

Healthy eating is a choice.

“What do raw beets taste like,” she asked.
