Blackberry Tea

Sandi, Life at Spring Meadows
A refreshing tea that can be served hot or cold

Ingredients

  • 2 cups boiling water
  • 3 cups frozen blackberries
  • Pinch baking soda
  • 3/4 cup cane sugar, extra fine
  • 4 cups iced water

Instructions

  • Using a 2 quart saucepan, bring 2 cups of water to a boil. Add the blackberries and the baking soda. Simmer for 1 hour.
  • Remove from heat and strain the juice from the blackberries. (Don’t throw away the blackberry pulp. Just set aside for now) While the juice is hot, add the sugar and stir until dissolved.
  • Pour 4 cups of iced water over the strained blackberry pulp. Strain again to get the juice. Use the strained juice to finish making your tea. Stir to blend.
  • Serve over ice. (Or, when its cool outside, this tea is delicious served hot.)
