Blackberry Tea
A refreshing tea that can be served hot or cold
Ingredients
- 2 cups boiling water
- 3 cups frozen blackberries
- Pinch baking soda
- 3/4 cup cane sugar, extra fine
- 4 cups iced water
Instructions
- Using a 2 quart saucepan, bring 2 cups of water to a boil. Add the blackberries and the baking soda. Simmer for 1 hour.
- Remove from heat and strain the juice from the blackberries. (Don’t throw away the blackberry pulp. Just set aside for now) While the juice is hot, add the sugar and stir until dissolved.
- Pour 4 cups of iced water over the strained blackberry pulp. Strain again to get the juice. Use the strained juice to finish making your tea. Stir to blend.
- Serve over ice. (Or, when its cool outside, this tea is delicious served hot.)

Sip while sitting on the porch enjoying this delicious drink with a friend!

This tea sounds wonderful! Do the seeds pose a problem at all? I LOVE the flavor of blackberries, but I don’t care for the large seeds. Guess I could strain them, or is that not necessary? Thanks, Sandi, and hope your trip and workshop were all you had hoped! I’m sure just getting up to those NC mountains in the Fall was refreshing and wonderful! Take care! Kay

Kay, glad you read the part about straining! I have found the sweeter berries have both seeds and thorns! The Arapaho blackberry plant is one that is considered seedless and thornless (It has seeds but they are just really small). My blackberries have seeds and thorns. Painful thorns! But, I love the flavor. By letting the berries simmer in the hot water for an hour before straining, you get all the wonderful flavor!
My trip was wonderful! I have pictures I will post soon of the beautiful mountains and the vibrant colors of the leaves as they change this time of the year! The entire trip was much needed and refreshing!
