About this Recipe

Thirty years ago, give or take a few years, each day around 3 pm I was most likely in my kitchen baking peanut butter cookies. Or making popcorn. Perhaps I was cooking the stovetop type of Chocolate Oatmeal No-Bake Cookies. All of those were favorites of my kids. I planned the baking so the smell would fill the house and greet them when they walked in the door coming home from school. I was making memories for them. I learned that from my childhood days. When I was a young girl, my momma always had something ready, like a plate of her peanut butter cookies, when we walked in the door from school. I still remember the smell that filled our home. Good memories!

Today, I decided to bake peanut butter cookies. I used a simpler recipe than the one my momma baked, but even so, they are yummy and good. I need some kids to walk in the door and rescue me. These cookies are fresh out of the oven and hard to resist.

Ingredients

  • 1 cup smooth peanut butter
  • 1 whole egg
  • 1 cup granulated sugar

Mix all together. Roll dough into balls and place on a baking sheet. Press with tines of a fork to flatten. Bake at 350 degrees for 7-8 minutes. Cookies will be soft when taken out of the oven. Allow to set 10 minutes before serving.
