Many years ago, as a young mother with school-age children, each day around 3 pm I was most likely in my kitchen baking peanut butter cookies. Or making popcorn (one of our favorite is Carol’s Caramel Corn). Perhaps I was cooking the stovetop type of Chocolate Oatmeal No-Bake Cookies. All of those were favorites of my kids.
I planned the baking so the smell would fill the house and greet them when they walked in the door coming home from school. With every ingredient, I was making memories for my family. I learned this from my childhood days. When I was a young girl, when my brothers and I walked in the door from school, my momma always had something ready, like a plate of her peanut butter cookies. I still remember the smell that filled our home. Good memories!
Through the years, I added this Peanut Butter Cookie recipe to my arsenal. It’s a simpler recipe than the one my momma baked, but even so, they are yummy and good. I still make the old-fashioned ones occassionally. Both recipes are the best of the best!
I need some kids to walk in the door and rescue me. These cookies, especially fresh out of the oven, are hard to resist.

Ingredients and Directions
1 cup smooth peanut butter
1 whole egg
1 cup granulated sugar
Mix together all ingredients. Roll dough into balls and place on a baking sheet. Press with tines of a fork to flatten. Bake at 350 degrees for 7-8 minutes. Cookies will be soft when taken out of the oven.
Allow to set 10 minutes before serving.
